Red wine is not normally served or cooked with fish, but it really works
with salmon, so give it a whirl and turn some heads at your next dinner
4 6oz Macknight salmon mignons
2 tsp of olive oil
1/2 tsp of sea salt
200ml red wine
3 juniper berries
1 tsp of sugar
heat a non stick pan on a medium heat. Meanwhile drizzle the salmon
with a little olive oil and season with a sprinkle of sea salt flakes.
Add the salmon into the hot pan and cook on one side for 4 minutes,
until golden. turn over the salmon and pour in the red wine. Place the
butter slices on top of the salmon. Chop the juniper berries to
release the flavor and add to the pan, followed by a sprinkle of sugar.
Cook for a further 4 minutes with a lid on the pan to keep in all the
flavor. When the salmon is cooked, serve by spooning over the red wine
